I picked up some ripe bananas at the store last week and was craving bran muffins. I decided to combine the two and make a delicious, moist muffin. I researched lots of recipes, but ended up coming up with my own recipe.
I am with out an oven right now, and I was even able to make these in my handy, dandy toaster oven! Yeah for substitute ovens!
Banana Bran Muffins
1 C. Unprocessed Bran (wheat)
1 C. Whole Wheat Flour
1 C. White Flour
1 ½ tsp. Baking Powder
¼ tsp. Salt
1 ½ C. Mashed ripe banana
1 egg
½ C. Splenda
2 tsp. vanilla
1 C. plain fat free yogurt
¼ C. canola oil
¼ C. ground flax seed
Combine dry ingredients in a bowl. Combine wet ingredients in a separate bowl. Then slowly combine the two. Mix until combined. Be careful not to over mix, you don’t want a tough muffin!
Bake at 350 for 15 minutes. Makes 12 muffins.

I added ¼ C. of chocolate chips, which made them ohh so delicious! The chocolate chips are not included in the nutrition information.
