Peanut Butter & Chocolate Chip No Bakes

Oh my goodness these cookies are delicious like candy.  I needed to whip up a batch of thank you cookies and this is what I came up with: Peanut Butter and Chocolate Chip No Bakes.  Sorry no picture, I guess I forgot! Enjoy!!

Awesome PB&CC No Bakes

1 cup corn syrup
1 cup sugar
2 cups creamy peanut butter
1 tsp vanilla
4 1/2 cups old fashion oats
½ cup chocolate chips (frozen or chilled)


Combine, corn syrup, sugar, peanut butter, vanilla in a sauce pan over high heat. Keep at a rolling boil for 1 ½ minutes, then take off the heat and add oatmeal. Allow to sit for a minute before adding chocolate chips. Gently stir in chocolate chips. They will melt some, but you want to try to keep them as whole as possible. Makes 2 dozen large chewy cookies.

Aha! Sounds like a good way to help use up a jug of p-butter I bought for company-----since I have no plans for pbj sandwiches!

That sounds delicious -- gonna have to try it, but then anything with chocolate and peanut butter together has to be good.
